Yes, you can.
I've done this several times. No problems at all.
Flights can be booked up to 340 days in advance.
Problems might arise if you decide to cancel the trip after the expiration date of the miles. Usually you can get a refund of the miles for a fee, but I think this can't be done if the miles have expired. You could still change the travel dates for CHF50/EUR30/USD30 though.
