so the next question, logically, is how does ordering work with a codeshare? My NRT-ZRH is on LX metal obviously but NH flight number. LX.com doesn't give me the option of meal pre-order, would calling in LX work in this case?

You can probably contact LX’s service centre in Japan up to 24 hours before departure.

Weekend and Holiday 09:00-17:00

I think Japanese passengers expect to see menus before they travel. Lufthansa published menus for flights to/from Japan on their Japanese website long before they started publishing them for all longhaul flights.
