Arriving 8PM means being in the city well past 9PM (depending on luggage, immigration, trains, taxis...), finding "a nice dinner" in Zurich at that time might prove a challenge. I'd say first find a restaurant you'd like and see if they'd serve you around 10PM. Then work around that.
