In Summary my options would be:
30 Euro fixed rate for taxi
approx 25 Euro for Uber
5 Euro for the Expres Aeropuerto Expres bus
5 Euro for the train from Atocha

Exactly. Also the train from Atocha is cheaper than the bus. And it's easy to get to the correct platform since you just go to the one that's furthest to the left when looking from the atrium.
