WGA+ allows confirmed changes on the day of travel. Change it multiple times if you want. Checking a bag is easy.
WGA allows standby. In practice that means for earlier flights only. Your baggage will probably take the original flight. With high loads you might not get a seat, and if you do it will be one of the least desirable seats.
WGA+ is generally a good deal if you want to fly a different time than you bought.

I have a ticket for this Thursday that is WGA+. but I don't think I will need a standby on the day of travel. The phone agent told me that it could not be downgraded to just WGA but I don't think that is right.

Regardless, the phone agent is right. You cannot upgrade or downgrade fare class without in effect canceling the ticket and buying a new one at the current fare. As you approach the day of travel the WGA fare will get quite high.
You need to decide between WGA+ and WGA at the time of purchase or at least 2 weeks before the trip, whichever is later. Otherwise the cost makes changing the fare class prohibitive.

Is the correct time to attempt a SDS, before departure of the first segment (and perhaps even 30 minutes before that)? I have a two segment trip where I might want to change the second to an earlier frequency, day-of.
The WN webpage on the topic has a blurb in the FAQ that says:
This sounds like I should add myself to the standby list of the desired second segment, before even departing on the first. I assume the app wouldn't allow it until day-of?

Hello, does anyone know, how does Southwest accommodate checked luggage if I try to standby for an earlier flight?

When you choose to travel standby after checking a bag, you are voluntarily separating from your baggage. If you are cleared for your desired flight and your bag does not arrive with you at your destination, Southwest doesn't pay for delivery charges to get it to you.
