WGA+ stand by protocol
I have an early afternoon flight out of Seattle after a cruise. I'd have preferred the ~10am ish departure but thought it be too risky. A couple months ago after a different Alaska cruise, I had a 3pm flight but was able to get on a 9:30 ish though that cost me like 10K points. So this time, I booked a WGA+ fare. Can I just go to the gate at 9-10am if I make it there and do I automatically get a seat if there are any still available?

If there's a seat still open by then, you'll be able to make the WGA+ change online when you're in an Uber to the airport.
Edit: if you're more worried about security waits than delays during debarkation, yes, you'd be able to make the change at the gate. I'd do it online as soon as you have good confidence you'll make it in time for the earlier flight, though.
