Yummy Kansas style BBQ at a restaurant named 18th & Vine. Address is: 4100 Maple Ave., Dallas. It is about 3-4 miles away from Love Field. https://www.18thandvinebbq.com

I'm Dallas based - let me know what you're in the mood for, I'll point you in the right direction.
Rise No 1. (Mentioned above) - All Soufflé - all the time. Excellent. Can be a little slow - grab a seat at the bar and order there (to speed things up). Also, order the Marshmallow Soup. A unique place - totally support this recommendation.
18 & Vine (also mentioned above). Good BBQ (KC style), but you're in Texas. I'd recommend Pecan Lodge in Deep Ellum if you want some more Texas 'cue.
If you are hungry for Steak - Nick & Sam's (you'll often run into Dallas Cowboys player here) is excellent, as is Del Frisco's Grille in Uptown. Both within striking distance. There are lots of good options here.
If your feeling Fancy, head to Fearing's in the Ritz Carlton. One of our better local chef, menu leans Southwesten.
Mexican/Latin Mexican cuisine - Meso Maya is good, as are many others nearby.
Indecisive - go to Trinity Groves, restaurant incubator development. Many options, most good.
Get delayed and lose the layover - Sky Canyon in the Terminal. Good stuff.
