If anyone has ideas for 4 adults - 4 kids, middle price range, staying together for 1 week, I'd appreciate the suggestions.

One possibility is a vacation home. There's a lot of good information on the Disney board site at: http://www.disboards.com/forums/

If you go there, do a search on 'vacation home' in the Orlando Resorts and Attractions forum. There are dozens of different vacation home rental places in Orlando.
