DL and OK (Czech Airlines) go non-stop from JFK. Other than that, you'd be connecting. AF serves Paris from a lot of U.S. gateways, although AMS (by KL or NW for the most part) is a far better place to connect.

Where will you be traveling from and what class of service will you be taking?

In economy, there is almost no difference between DL (B767) and OK (A310), both have standard seats, overhead TV, inflight service: choice of two hot meals and snack before landing
In business class, I would prefer Delta. CSA has better meal service, BUT seats are very old and uncomfortable, personal TV = small Ipod, I think Delta C-class seats are better.

You might let us know a few things, like where you are starting from? Who's paying - or is it an award? Is it important to be there on time?

There's a lot of debate about who has better seats, or better lounges, but it's sometimes more important to consider what will happen if things go wrong. For example, Czech (OK) Airlines may be comfortable but if their incoming flight is delayed or breaks down, you'll be stuck. Whereas if you go Air France via JFK they have 4 flights a day.

My pet hate is short red-eyes where there's a long drawn-out clanking dinner-service, a brief few moments of sleep and then the crew decide to get breakfast over with and turn all the lights on 3 hours before landing.

Most often it's the US airlines who do this. Air France's offhand crew are not too bad in this respect.

CSA are scrapping the JFK route at the end of the summer timetable.

If you are flying from JFK (or MIA- though I am not sure exactly when they start flying there), I would fly UX- the business cabin on their A330 is very nice, you don't run the risk of a middle seat a la AF B777 (and others?), the lieflats are good enough for me, service strikes the right balance between friendly and professional, and it's easy to connect at MAD...Plus the route is newish, therefore you have more chances of an empty seat next to you.

Flying from elsewhere, your choices will normally be restricted to AF/KL/DL. If you're starting from a place without direct service to the European hubs and need to make two connections, I would consider XXX-JFK-LYS-PRG for the ease of connecting at Satolas.
