I didn't try the regular menu items obviously but none of them seemed appealing to me -- I think there were lamb and veal options, IIRC, as well as a Chinese dish and something else. It's possible I would have enjoyed them if I hadn't BTC'ed and had been forced to choose, of course. I have the menu at home if anyone is curious but this was in November so it would no longer be current.
Also I notice from your earlier post you are flying an overnight flight SIN-SYD, we were on the SQ211 morning flight so it would have been a different menu in any case.

Is it possible to specify no meat when ordering kaiseki? I eat fish but no meat.

I doubt it could be done in advance. Perhaps ask the flight attendant to skip plating any meat items? Otherwise, the items are kept separate from each other so you could leave the few that contain meat.

Is the Kaiseki meal restricted to First and Suites ? I will be traveling in Business and don't see the the choice at Book The Cook

Yes, Kyo Kaiseki is only for First Class/Suites. If you are flying to/from Japan routes in J, you have the option of the Hanakoireki meal on your regular menu.
