Connection Between IT A & G
 
First time flying through SFO, arriving on AC and connecting on OZ with a 1:50 connection time. Would I need to collect baggage and check in again? Customs? Go through security check? Quickest way to travel between these two terminals? Thanks

Yes, all passengers connecting in the USA from other countries must go through Immigration and Customs. I know that's probably a stupid rule, but it is the rule.
Transferring to a Domestic or Onward International Flight
Onward passengers should exit the Arrivals Hall through the doors marked "Connecting Flights." A Connecting Baggage Desk, located directly outside of the exit, is available to recheck baggage tagged to its final destination. If an agent is not available, or baggage is not tagged to its final destination, passengers should visit their airline's ticket counter.

Please note that there is no secure transit area for passengers transferring from an international to a domestic flight. Passengers exiting the Arrivals Hall are in the airport's public area and are required to go through the security checkpoint at the boarding area for their next flight. Please visit the Transportation Security Administration's website for information about the security checkpoint process.

Passengers may transfer terminals by walking or riding AirTrain, SFO's automated people mover system.

I guess i should add i would clear customs in YYZ already, so thats the confusing part.

AC uses both IT-A and G. You will clear immigration and customs in Canada so your baggage could be (should be) checked through to OZ without picking them up. If your AC flight arrives at IT-A, you just simply walk to the gate and check-in with OZ to get your passport and baggage tag verified. If your AC flight arrives at IT-G, you will need to exit the sterile area, get your passport and baggage tag verified at OZ (Aisle 8 or 10?) and proceed to TSA at IT-A. It's a 2-4 minutes walk from IT-G to IT-A but do allow 30 minutes to clear TSA as CX, KE, MU and KL depart around the same time. Quickest way from G to A is to walk straight after exiting the IT-G sterile area, you will not need to make any turn or change level.

Awesome, thanks sfosuw. Exactly what I needed to find out. Now it's a coin toss of where i'll land from AC.

Oh, sorry. Yes, I forgot that they do that in YYZ.

Not exactly a coin toss. Recently, something like six of AC's seven daily flights are at G91 and G93. You should expect the long transfer and to re-clear security, and consider it a bonus if you land on the A side.

Though this could all change again before your flight.

Regardless, an hour and fifty minutes is plenty of time to make it, unless you hit a bad delay like today's flight did.

The morning Air Canada flights arrive into Terminal A, up to ~12:00. They then transfer over to the G Terminal for the late afternoon/evening flights.
