Flights departs Sunday at 07:45…. What time should we arrive ( we will be checking bags)

That time is still within the busy period. I’d plan to be at checkin about 2 hours before scheduled departure. Airport checkin/bag drop will close strictly 40 minutes before scheduled departure time.

Ensure you have checked in online and obtained your boarding passes before dropping your bags to avoid the FR £20/£30 per person checkin/boarding pass re-issue fee.

Do we just take our bags since we have printed boarding passes already?

Yes take your bags to the checkin counters, have your BPs and passports ready for inspection.
