Iceland Air is running a sale again from US gateway cities which includes Saga class (prem economy style business class) valid for travel June 1, 2021 to Feb 28, 2022. If you have Iceland air credits sitting around from Covid cancellations, you may wish to explore this!

I see EWR or IAD to Europe in September in the upper-$800s.

If you add in a 24+ stopover in KEF on the return you can get some nice deals to London. These book into A class which earns 125% with Alaska as RDM and EQMs or 11932 miles.

if you use google maps. choose NYC->LHR, choose business & FI

then switch destination to europe, 1 week trip ANY time

seems like (from NYC/Chicago/Orlando to)
London $850+
Paris/Norway/Denmark/Denmark/Sweden/Finland/Manchester/Dublin $950-1k

as mentioned by OP, just note the hard product (seats) aren't good , more like PremiumEconomy. Iberia/AC has $900 PE NYC-Europe about the same time, not as many destinations though

Just be aware that it took me 6 months to get refunds from Icelandair after they cancelled flights on me last year and then only after a credit card dispute. So if there have to be changes to your booked itinerary, don't expect a refund anytime this year.

Saga has gotten much more economy-like in COVID. You're only allowed 2 cocktails per flight and the meal is a cold salad or a chicken sandwich (also cold). Couple that with the lame hard product and ....well...no thanks.
