Flew this earlier this year (March, a little cheaper then) --- it's probably worth flying CAI - AMM earlier in the day and spending some time in Amman, the Dead Sea, or even Petra before connecting on to Bangkok. Amman Airport and its lounges are pretty depressing around midnight....much better to be spending time --- and having dinner --- elsewhere. The scheduled eight hour flight to BKK typically takes only 6.5 - 7 hours in the air, so you probably won't want to be wasting valuable sleep time eating dinner on the flight. YMMV

There is no dinner service ex AMM (at least in business class). Only some canapees/bites if you are still awake. As you say, it is a short flight so to maximize sleeping time most pax go to sleep immediately. Full breakfast is served before landing at BKK.

Petra would be a long day assuming you arrive early in Amman. 3 hours by taxi each way, plus you normally want 5-6 hours at the site. But certainly doable with a 2am departure for China.
