Not sure if this is a good deal or not.

AMS-BKK Roundtrip in Club World coming up at just over 1200 GBP

You can avoid the 777 direct BKK altogether and make a nice itinerary involving KUL & HKG and take the 789 & A380

Ha. Just booked this myself. An OK deal, but I needed it to get to HKG

Unfortunately the longhauls book into I class which only equates to 150% EQMs for AS. Still not a bad deal for around 22,500 EQMs on AS and 56,000 RDMs on AS.

Get all your flight numbers and dates etc on screen then call BA and book over the phone, giving the agent exact details. Will work fine !

You can book on UK Amex Travel if your plans are certain (not sure if this is a good idea for non-UK residents)

You can have the main destination be HKG, BKK, KUL and/or SIN. I got one with 1 week in HK and 72 hours in BKK (and also 20 hours in London each way so I can bring my bags home and go HBO to AMS)

Sorry this might be an amateur question, i'm thinking about booking a similar flight since i'll be in EU but i'm unsure about change date policy:

Time/date changes permitted at any time before each flight departure for a change fee of €300 or an upgrade fee of €300 plus any difference in fare. All sectors may be repriced. Changes subject to availability. Fees apply per ticket

I'm almost certain that i'll change the date of the return flight (i live in Asia actually). Since this books into I class, i understand that i'll need to pay €300 change fee, but how does the "reprice, difference in fare" work?

If I class is available on future dates that i want, do i only pay €300 change fee? Or do i need to pay €300 change fee + whatever exorbitant fare difference WILL be? Seeing how it is almost certain when you want to change the date in the future, it'll price out like €2500 one way or something

If you have already flown the first leg, the reprice will be calculated at historical fare prices (i.e. the price you would have paid at the time of booking), plus the 300 change fee. This is subject to availability in the fare bucket you booked in.

Either way, your last line is correct - you will have to pay the 300 plus the fare difference calculated either at historical price (good) or at current price (not so good). The "change fee" is essentially a charge for changing your ticket.
