Wouldn't it have to be after 10/25 when ps service moves to EWR for the flat bed or are they flying flat beds there sooner?

Was (or perhaps even is?) available for 367 USD earlier this week, from many CA airports. Also for PLS. I booked SAN-EWR-PLS.
I have no idea about flat-beds. Afaik all these flights were in regular domestic F but I'm not USA based and not a UA expert. I only booked UA because they were almost half the price compared to other carriers and since I needed the flights, it seemed a good deal, but not MR material so I did not post. Apologies if I was supposed to do so.

FYI hidden-city with these can be a bit annoying, as the staff will often ask me for a return ticket. I've been asked when I've bought one-ways to CUN/SDQ/MEX - not sure if they'd ask for them for NAS or not.
I always just put something on hold to show them, but it's worth mentioning.

No, CO dba UA already operates a couple of CO 752s in int'l configuration every day on this route. They have been operating for quite some time now, the rest of the flights are 737s/320s through, so it's not easy to notice until you find yourself aboard one of these birds. These run at a premium on many dates, but not all dates. Post 10/25 every flight on SFO/LAX-EWR should be flat bed, that's the only difference between pre and post 10/25 bookings.
