1. If you mean the Holiday Inn at 211 Dexter Avenue North.. taxi or Super Shuttle, taxi being a lot faster and easier for only a few dollars more. The Holiday Inn is a little bit north of the downtown core. Light rail would drop you off a mile short, and AFAIK the Gray Line Airporter bus doesn't venture that far north.

Good seafood restaurants in Seattle? Uh... yeah.
If you want oysters in particular, it's hard to beat Elliott's Oyster House right on the central waterfront below the Pike Place Market. Something of a schlep from the HI, but worth it. http://www.elliottsoysterhouse.com/
Otherwise, have a quick look at the "Seattle Dining" thread right below this one (at the moment.)
ETA: BearX220 beat me to it on both counts.

Holiday Inn Express Hotel & Suites
226 AURORA AVENUE
How's the hotel location? Last time I stayed at the Crowne Plaza and walked everywhere. I enjoyed the hotel, but they are full for thurs-fri. Using points this time.
I can hotwire a 4* (it would most likely be the westin or Renaissance)

It's right across the street from the HI referenced upthread. You're a little south of Seattle Center on Dexter, ten-minute walk to Queen Anne Hill or the Space Needle, 15-minute walk downtown. It is not really in the middle of things and the area is quiet at night. But it's an economical alternative to staying in the downtown core.

Another place for oysters along with a nice water view is Waterfront Grill by the Edgewater. A glass of savignon blanc, sitting on the patio, plate of oysters, sunny day. Wonderful.
