Concerned about safety of my luggage on Nok Air.

No, if your ticket booked with Nok Air is entirely domestic the Montreal Convention will not apply. The treaty only applies to international journeys.

Why are you specifically concerned with NokAir and their ability to deal with your luggage?

Remember that typically 90% of interaction with luggage is done by airport staff albeit on behalf of the operating airline, and usually it's the same staff, systems and processes that Nok would use that also deal with AirAsia, LionAir, maybe even Thai luggage, all in AOT premises.
