Is this a valid and/or advisable itinerary?
 
JFK-ORD-PVG; overland PVG-PEK; PEK-BKK via HKG; BKK-HKG; HKG-AKL;AKL-SYD; SYD-ADL; ADL-BNE; BNE-PER; PER-JNB; JNB-CPT; CPT-DUR; DUR-JNB; overland JNB-DAR; DAR-LHR; LHR-DXB; DXB-MAD via LHR; MAD-MIA

Is this the maximum I can do on xONEx or have I exceeded some limits or missed something? I am not that much interested in gathering too many miles as a frequent flyer. My main interest is in making sure that I am getting value for the money especially since I will be going business class. Any chance of being able to add Phillipines, Fiji, or Seychelles?

The first problem I see is that PER-JNB is a QF codeshare on SAA metal and is not eligible for xONEx tickets

If you make your SWP order (HKG)-AKL-ADL-PER-BNE-SYD-(JNB) it's legal.

Is it the maximum? No, it's only 19 segments, several of which are very short. If you're trying to maximize miles, there are several possible tweaks. But it depends on your aims for the trip.

(I assume you mean PVG, Shanghai, not PDG, Padang, Idaho. Also DAR for Dar es Salaam, not DSM, Des Moines, Iowa.)

You are right on both counts - it should be PVG for and DAR. This is what I want but would like to know what "tweaks" you have in mind.
