How seats are being occupied on expert flyer?

Currently I have bought an economy class ticket travelling hkg-nrt-lax in aa operated by jl
I usually check the seat availability from time to time (feeling fun)
so for yesterday and the day before ytd the main cabin was like 80% occupied (indicated in blue in experflyer)
and just now i checked again... there is only 5-6seats are occupied, for the others they are now available o.O
So I am wondering how actually airlines do on seat allocation? I think it is a huge difference
