Flying into Australia - collect bags at transfer airport or destination?
Just checked in at Heathrow, flying to Tokyo then Sydney then Melbourne (one ticket, no stopovers, JAL, QF, QF). The check in lass rang someone to find out whether our bags would need to be collected at Sydney or Melbourne. I was expecting Sydney, based on past experience with other airlines. She said Melbourne. Is she right?

Well, she isn't wrong, you will pick up your bags in MEL. But also in SYD. As Kiwi Flyer says, you must clear customs with your baggage.

Transferring from T1 (international airport) to T2 and T3 (domestic airports)
The transfer lounge is located on the arrivals level of Sydney International Airport. After you clear customs, follow the signs located outside the terminal; entry is outside of the main terminal within a short walk via a weather protected walkway. Recheck your baggage at the seamless transfer check-in counters and then board the shuttle bus for the domestic terminal. It operates from:- 6 am to 12 pm every 10 minutes
- 12 pm to 9 pm every 20 minutes.

The bags will be tagged for MEL, but as SYD is the port of entry must clear immigration & customs with all carry-on & checked baggage at SYD
