Check in for the domestic flight in the international terminal. The QF check in staff seem to have a lot more discretion if the incoming flight is late than those over in the domestic terminal to make changes to onward flights.

Need some advise on my flights
Arriving Sydney International on QF82 at 0610hrs on a Saturday morning in January. Have a connecting flight to Melbourne at 0800hrs on QF415 at Terminal 3 on a single ticket. I'm a tourist, flying Economy, able to use Smart Gate.
Does it sound like I may need a miracle to get on board the flight to Melbourne?
I can still change the flight time to Melbourne, but would like to know how much time I should have in between to ensure I don't end up missing my flight. There is one at 0900hrs. Will that do?

On a single ticket/PNR and all on QF do not be concerned. If the incoming flight is late its QF's problem and not yours.
Just follow the signs (to the right) to the domestic check in area in the International terminal

To add to Mwenenzi's good advice, 1h50 on a single ticket is doable because you'll already be checked in and if the inbound is running late or you get held up at immigration or customs QF will rebook you.
On separate tickets, it is doable but very tight and a high risk of failure.

Is it possible to check in for both flights at port of disembarkation or I still need to check in again at the QF domestic check-in area at the International terminal.
If I do end up missing the flight to Melbourne, QF will rebook me on the next available flight? Does that mean I will be at the mercy of which flight have seats?

I suppose in theory, yes. But in practice (assuming that you're travelling alone or with maybe one or two companions, not as part of a 100 piece orchestra!) that is unlikely to be a problem. Sydney - Melbourne flights are frequent and use mostly 737-800 and A330-200. Even on a Saturday in January there are departures at 9:00, 9:30, 10:00, 10:30, 11:00, 12:00, 13:00 etc. You shouldn't need to worry.

Highly likely you will get both boarding passes & bag tagged with both. But in reality makes no difference. You need to take your checked bags to the domestic check in area where they will issue the boarding pass if needed. The queue will be long, but it keeps moving.

To add to the above, if on a single ticket you'll already have a boarding pass for the onward flight. If no checked bags and on time then you go through security to the transfer bus to domestic - no need to check in again. If checked bags or delayed enough to miss your connection then deposit bags/check in for new flight at the transfer desk, then go through security to the transfer bus.

Quick question regarding connecting flights on two separate PNRs. I plan to fly the following flights on 1/1:
QF452 MEL-SYD
TG472 SYD-BKK.
QF452 arrives in SYD at 18:25 and TG472 leaves SYD at 22:00. Did I leave enough time in between? Thanks!

If you've got checked bags you'll need to collect them at the domestic terminal and get them between terminals, which means either public bus (T-bus, runs every 30 mins until 9pm), public train, or a taxi.
At that time of night the International terminal does get fairly busy with departures, but you've got plenty of time to make it through.

More than enough. You won't be able to check your bags through (QF only do that to OneWorld airlines or if you're on a single ticket). If you've got no checked luggage you can use the Qantas transfer bus to get between terminals - runs every 20 mins until 9pm.
If you've got checked bags you'll need to collect them at the domestic terminal and get them between terminals, which means either public bus (T-bus, runs every 30 mins until 9pm), public train, or a taxi.

06:50 is a very busy time for arrivals
I am not sure if Irish pasports can use SmartGate (faster). UK passports can.
You check for the QF CNS flight in the international terminal and take the QF bus over to domestic
