If you're a little flexible with your dates and Economy is really just fine, you should be able to find award tickets when the time comes. It gets trickier when you're trying to get a first or business class award on a specific date.

Learn what you can from FT - I'm a whole lot smarter about travel than before I found FT and I still have a lot to learn.

Enjoy!

I actually think the OP and his Wife should be able to rack up enough for J to europe or South America.

I haven't meet my wife to be yet, but that hasn't stopped me from saving up miles for the honeymoon, I am at about 277,000. I need to double it to hit my goal of RTW tickets in a premium cabin.

Even if you both start with 0 OnePass miles.

1. Get the Chase OnePass Credit Card for 25,000 Miles
2. Open a Chase OnePass Checking about (this one comes and goes) and get 20,000-25,000 miles
If you and your wife to be, both do that you'll have enough miles for a Y ticket to europe.
3. order some dollar coins
4. charge everything you can for your wedding on your cards, invitation, flowers, catering EVERYTHING. Try to ballance it out so you each have the same amount of miles.

Are you buying a house soon? You feel comfortable applying for CC?
How many FF miles do you have with CO?
If you have 1 year, dedication, discipline, and some "luck" I would suggest that you and your wife start churning AA CC. Both of you could potentially get 200k+ miles each. Should be enough for a nice trip to Europe for both of you. Alternatively a honeymoon in the Caribbean can be nice too (easier to find use AA miles for this destination).
