The time posting seems to be inconsistent.
Currently I use only the cards registered to AA and NWA (though I have registered with other airlines)
a ) AA --check the AA.com I-dine site to see if a visit posts, takes about 4 to 7 days. After 10 days give i-dine a call to see if they have got the receipt.
Once its posts make a printout of the website as proof until it shows up on your AA statement.
I have three credits showing on i-dine site for over 3 months not yet posted with AA.
Problems here:
1) if restaurant listed in the current booklet leaves program you will get credit. They require a fax copy of the receipt or to have it mailed in( many receipts do not fax well) Sometimesneeds two phone calls.
2) At the restaurant try and make sure they transfer the bar bill and combine them, since they system usually picks up only one. Call or fax to get the credit for the other (NOTE the rules say ONE VISIT per month not
one tab)
For NWA its hit or miss seems only 75% post in about 6 weeks, NWA website does not identify the individual restaurant so it harder keeping track, worse if you have 2 bill for the same amounts.
Suggest you call when you need to make the changeover, make sure they have all the unposted receipts, if OK then change believe it takes 48Hrs.

Why not make a copy of the receipt and fax that instead of the receipt?

No referring to the size etc but on many customer copies you get from restaurants (especially the yellow ones) the print is very often hard to read at best of times, even adjusting the tone on a copy does not make it much more legible when sent via fax.

The listing on your credit card statement works as well for verification of a visit. Of course it means waiting for your bill. Often printouts of ongoing credit card statements don't print out well. It's nice to be able to take care of these things right away while it is still in your memory bank.
