No Activity. Mileage expires Dec 31, 2005.........

My wife and I only have 7 or 8 of these.

Does giving 1000 miles to the Katrina fund constitute activity?

Does adding 1000 miles from Diner's Club constitute activity?

I presume these are activities, but if there is a fine print way around it, I know the FF programs will have found it.

Yup. Those will all count as activities. I usually order a magazine subscription to keep my account active.

As chococat stated, those do count as activity. For more suggestions and tips, I suggest you post in a specific airline forum.
