Just finished booking my first.
2 business class redemptions booked on Aeroplan; 125K Miles each ticket and $149 in fees/surcharges (long story, but essentially they couldn't calculate the surcharges using their system and had to calculate them by hand which led to very low fees)
RDU-EWR-FRA(7-hour layover)-BKK(12-hour layover)-HAN(2 weeks in Vietnam)
HAN-BKK-PEK-VIE(4 days in Vienna)
VIE-BRU-IAD-RDU
Pretty excited for my first real complicated reward booking.

Just pulled off what I consider a pretty great trip using USAir's rather, uh, "bendable" routing rules.
NGO-SIN (stop)-DPS (stop)-CGK-BOM-NGO
I was able to pull off a stopover in Singapore and a stopover in Bali and also an open jaw (flying in to Bali-DPS but out of Jakarta-CGK). Pretty happy with the result, seeing as the terms state that you can have "1 stopover OR 1 open jaw".
I almost pushed it and tried to open jaw by flying in to BOM and out of DEL but the flights didn't work out that well anyway, so I decided not to risk it.
Total cost: 40k USAirway miles. I'll take that any day!

I use open jaw tickets all the time.. less so for stopovers

Star Alliance last month:
San Francisco to Frankfurt on Lufthansa. Layover there two days to recover from jet lag (in the Hilton for free), then Frankfurt to Athens, one free night in the airport Holiday Inn, then a tour of Greece and Turkey. After the tour two more free nights in the Istanbul Holiday Inn, with an upgrade to a suite simply because of the status that came with the Priority Club credit card (highly recommended). Return on Turkish Air Istanbul to Los Angeles, then a short flight on United to San Francisco. All business class for 100K Continental Airlines miles.
We could have done the jet lag layover in Munich instead (recommended), or maybe even in Zurich via Swiss Air, but been there, done that.

Star Alliance a few years ago
San Francisco to Korea on United - a day flight(!). Overnight in a comfortable, inexpensive hotel near the airport (including transit to and from the airport), then on to Bangkok on Thai Air. Minimal jet lag due to the hotel stay. From there a wonderful tour of Vietnam. Then Bangkok to Tokyo on Thai Air, 4 day layover, then Tokyo to San Francisco on All Nippon (ANA).

SIN-IST-OTP(stopover)-ZRH-ORD-SLC
Was able to book it online (but going the other way around, SLC-SIN, SYD-SLC the website wouldn't let me, although I bet it would be fine if I called)
