What FF program to use on other airlines' flights (Air China and AA)

I'm a bit overwhelmed by all the information on this forum, so apologies in advance.

How does one figure out, generally, what frequent flier number to give when flying on another airline?

For example, I recently booked a series of Air China and American Airlines flights in one itinerary and I regularly fly Singapore Airlines. I suppose I should give my Singapore Airlines Krisflyer number of Air China because it is a Star Alliance member and all my credit cards feed into Singapore Airlines' miles program.

You are correct. If you designated star alliance airline is Singapore, then put you Singapore airline number in for all star alliance flights. For AA, use you designated one world carrier.
