I booked through Kayak which was handled by a sub-company named "Chat Deal" ...

received a cancellation / refund e-mail today, requesting authorization to charge additional ~$140 for "my refund request" as the cancellation fee is apparently $500

Will let Amex handle this one ...

Same here, however, they have refunded me in full.

In other news, my flight booked via booking.com for April 2023 also appears to be cancelled overnight, no news from booking yet though about any refund.

Same here - as mentioned in one of my previous posts, I booked those near-1k fares and flew before (to GRU), I don't see any reason why those shouldn't. The base fare is €278, low for J, but arguably not a "non sensical" fare. The only thing that makes me "tick" is that I can't check in online and I think I remember I was able to in the past, including for flights still far-out. But I think we can confidently say (until proven otherwise) that those will fly.

A number of people have posted the emails Booking and GTG have sent.

LATAM works in partnership with IBERIA, which even if operates part of your itinerary, owns the entire fare of your ticket and, unfortunately, processed it at the incorrect rate.
Those emails include what is said to be an email from LATAM to the agents:

We hereby inform you that, at the request of IBERIA, your reservation has been CANCELED because, as IBERIA has reported, the rate of your reservation responded to an erroneous issuance.
One of my tickets began MAD-SCL IB-coded and operated and one was IB-coded and LA-operated.

From these emails, what are people's interpretations as to the owner of the ticket? Is it the case that LATAM owned the ticket and the cancellations were made by LATAM, as the owner, at the request of Iberia? Or is Iberia the owner?

Lastminute.com have just emailed to say they will be cancelling all bookings due to “the ongoing pandemic”. A refund will be issued in two months time, minus the insurance policy I opted on for. Alas this is only for the booking next week.

Chargeback time I think.

That one is laughable, certainly they aren't cancelling all tickets globally are they? If that ticket was for next week and they just now notified you, certainly you have some protection in EU 261?

Neither seat24 nor booking com (both German branch) have communicated anything yet
checkmytrip (as suggested by seat24) does not show my flights any more
my flights via booking com are still intact

EU Reg. 261/04 deals with cancellation of flights. There is no protection against cancellation of tickets that in the opinion of the carrier are invalid.

What about if part of the ticket is already flown? Say I have a friend who bought a ticket to Guetemala a few months back and he's doing backpacking. Can they cancel his return ticket tomorrow even if he's already flown part of it? Seems a bit dubious to leave someone in the middle of nowhere.

Then your friend has to take it up with the OTA or the airline in question (whoever cancelled the ticket during traveling) but it has nothing to do with EU Reg. 261/04 and it would not be the EU Reg. 261/04 that provides a right for the ticket to be reinstated or rebooked.

Anyone who booked via an OTA (booking.com) in my case.
Part of my flights were cancelled/removed last week. Only one segment is still intact but obviously the ticket is unflyable.
How long did it take for you between segments being cancelled and receiving the official cancellation message (and eventually a refund)? Did you have to actively inquire or did you just wait out?

I'm not sure how accurate that is
my return disappeared from iberia, however when I called them up they told me that they CAN see it on their system
so I then downloaded gotogate app input my details and the entire ticket is there
Untouched

Also untouched in the LATAM app?
