Just booked for 2. BLQ-MAD-SCL-MAD-FCO departing the 31/Oct.
Also recently called Iberia and they said no problem with not showing the first leg and continue with the rest. They said they don't issue a new itinerary and they only notified it in their system.

I just found out how to book SCL-GRU-MAD-Italy on the way back!
Just choose the Economy when booking, however, BA will choose the cheapest by default. Meaning the Business class will be shown and the SCL-GRU is the PE, that's why we could not book it when choosing Business at the first step.

I would have wanted but could not find good date (=good price, good schedule) for a weekend in Milan or Madrid with my wife. So I pass.
I also wonder if summer time is the best time to go there as it is winter time down there ?

If a five-day Santiago stay in the winter doesn't set your heart racing,
if 13-hour flights on Iberia are not your idea of bliss,
if you worry at all about the complications of travel in COVID times,
if you're concerned about the cost and time involved with positioning fights and hotel stays
then unless you are desperate for TPs, avios et al, or have reason to be in Santiago, you made the right decision.
There will be better, less risky and more convenient ways to earn the TPs etc
if 13-hour flights on Iberia are not your idea of bliss,
if you worry at all about the complications of travel in COVID times,
if you're concerned about the cost and time involved with positioning fights and hotel stays
then unless you are desperate for TPs, avios et al, or have reason to be in Santiago, you made the right decision.

Better book and pay via BA Holidays, just for EUR150
Btw, I chatted with a agent on BA.com, she could not give me the answer whether I can cancel the booking and request the voucher instead.
She only gave me the number of BA Office in Italy to call!

Agreed I guess the best option the 150 euros actually wit BA, the flight cancelation with IB is 125 euros and you don't know when or if they will give the money back
