Visa Information: check out the Vietnam visa/VOA thread in the Asia forum. You can get either a visa on arrival where you get the stamp on arrival) or a "looseleaf" visa in advance from a VN Consulate in the US (which allows you to go straight to the immigration queue). There are sometimes lines for the VOA stamp and so the loosleaf approach can save you some time.
Seat Assignments
per NWPlatinum below - Cathay blocks out all seats except for 2D for some reason. I never understood the reasoning behind this but in any event just contact them for a seat assignment and they’ll let you have your choice. They like to block out seats for people with bassinets and babies. But you can usually get 2A, which is the best see if you’re solo traveler. Just say I want seat 2A and I’ll move if requested at the airport (never was asked to move)

Everyone needs an e-visa approval before boarding if they will enter the country. (e.g. clear customs). Connecting flights - even on separate tickets - do not require a visa IF IF IF the connecting airline has a counter in the transit area. (The airline may have their own rules.) Going back to the same country is not allowed without clearing customs first.
Expect the visa check at your point of departure. (Computer will flag your ticket.) The actual stamp is received on arrival (in most cases). (There is also the possibility of a visa insert with no need to go to 'visa on arrival'.)

Indeed, but only once within 30 days. I had visa for 2nd time as I returned within 30 days. This was checked and also my onwards ticket out of Vietnam. I guess it is pot luck if anyone checks or not, I personally would not risk it and as someone said, just get a cheap Air Asia ticket etc to be safe.

Worst case, Skype call from Hong Kong.
I would be afraid of going to the transfer desk and speaking to them. If they run your passport it may bring both reservations up. (I am not sure how that works on the backend.)
One way or another you will want to be unchecked in from the DAD flight. Many reports of them searching the lounge looking for missing passengers. What you don't want - if you are going down this path - is for them to start looking for you, pull up your name and itinerary and seeing the second one. An agent could push it to reservations who has the power to cancel both.
I am too risk-averse to try this, but please report back. (Or PM me.)

Checked in via mobile app day of my flight. Used the mobile BP to get to through JFK all the way to the gate. Checked in to my other flight from the lounge in JFK, again via mobile app. When my BP was scanned at the gate it prompted a visa check. After they checked my visa my JFK-HKG-DAD BPs were printed but no mention of the other flight.
I tried to uncheck from the HKG-DAD flight via mobile app but wouldn’t let me do it.

Well, this might be the longest of longshots. I'm flying NA-HKG and have a long connection (12 hours) for CX flight to DAD. I'd ideally like to do a 2 hour connection to HAN.
Has anyone heard of success in changing flights/in destinations in HKG, or would this be a ridiculous thing to ask?

Well, this might be the longest of longshots. I'm flying NA-HKG and have a long connection (12 hours) for CX flight to DAD. I'd ideally like to do a 2 hour connection to HAN.
Has anyone heard of success in changing flights/in destinations in HKG, or would this be a ridiculous thing to ask?

This morning when my HKG-NRT took a delay which would cause me to miss a flight to CTS on another ticket (NH) I asked to see if I can be moved to the HKG-CTS CX flight and they laughed at me.

Presumably you didn't have a first class ticket. They might not want to laugh at you then?

Business class. Didn’t matter. Perhaps would have had better luck at the lounge but didn’t have time to go back to try. That said this is just a very recent data point, maybe OP will have better luck.

However, at the gate we were able to switch from a long layover in HKG (to HAN) to a short one, no charge.
If there is a short connection to DAD that you can switch to, that might work for you. (Then buy a cheap domestic ticket DAD-HAN.)

For one of these $1,500 first class tickets I can’t see agents being overly worried about stifling their laughter.

Doesn't matter if it was a $300 fare or a $3 million dollar fare, if you want to switch destinations, the computer recalculates.

Not sure about the agents, but if I saw an additional fare collection of $13,500 for a change of destination I would struggle not to laugh if asked to waive it!

How can a GA tell what one paid for their ticket?
In my example this morning where they laughed at my suggestion they looked at my BP but not at the computer, they didn't even bother checking to see what my fare was or if there was space on the alternate flight. For what its worth my ticket was an avios award.

I do not believe anyone has had any luck with that.

Update: no laughs from anyone. I may have misunderstood, but I think they would have let me drop the last leg in exchange for a new one-way ticket from HKG. That seems more than fair. It still wasn't worth the money for me, but they were nice enough to do the change for me.
