Visa Information: check out the Vietnam visa/VOA thread in the Asia forum. You can get either a visa on arrival where you get the stamp on arrival) or a "looseleaf" visa in advance from a VN Consulate in the US (which allows you to go straight to the immigration queue). There are sometimes lines for the VOA stamp and so the loosleaf approach can save you some time.
Seat Assignments
per NWPlatinum below - Cathay blocks out all seats except for 2D for some reason. I never understood the reasoning behind this but in any event just contact them for a seat assignment and they’ll let you have your choice. They like to block out seats for people with bassinets and babies. But you can usually get 2A, which is the best see if you’re solo traveler. Just say I want seat 2A and I’ll move if requested at the airport (never was asked to move)

Everyone needs an e-visa approval before boarding if they will enter the country. (e.g. clear customs). Connecting flights - even on separate tickets - do not require a visa IF IF IF the connecting airline has a counter in the transit area. (The airline may have their own rules.) Going back to the same country is not allowed without clearing customs first.
Expect the visa check at your point of departure. (Computer will flag your ticket.) The actual stamp is received on arrival (in most cases). (There is also the possibility of a visa insert with no need to go to 'visa on arrival'.)

I've got to say - what an awesome late Christmas present to myself! Positioning this week using AS miles on JAL - excited to try their J product from SFO, lounge (more importantly showers) at HND, and just a quick 24 hours in Da Nang to check out Chua Linh Ung and Pho Quang temples, plus sunshine, beach and fresh air. Then back home via JFK with a 7 hour layover in HKG to check out the noodle bar and other various Cathay adult playgrounds. Looking forward to reading (bringing 4 books), relaxing, sleeping, eating. Plus, a return trip in November to REALLY spend time in Vietnam and check out the culture, food, etc. My friends mostly think I'm a bit odd - but I love travel and people watching, the buzz of airports and almost electrical feeling of possibility and excitement in the air. It's just fun.
Thank you Cathay Pacific for giving me the opportunity to try something new and (comfortably) explore a part of the world I've never been. Plus - all the fun and anticipation before hand that is half the reason I travel anyways. The miles/status on AS is just icing on the cake. I think you haven’t gotten an answer because nobody knows. I think that if it’s a new destination, it’s going to be repriced at what the current fare is, but that’s just a guess. People on here don’t even know if we can change the dates, much less the destinations.
So my advice to you would be to call your OTA or CX and try to change it. But my airline knowledge tells me that if you wanna change the destination you’re going to have to pay through the nose and it will be priced at the current fare.

Just the possibility of not talking to a human and being able to change it until it works for a cool vacation. Planning on staying at the 4 Points property (yes, Marriott Platinum, I know) for a couple days before flying to the US on one of them.

How accurate is ExpertFlyer? I called CX today to see if it's possible to upgrade my D class fare to an A class fare. ExpertFlyer showed multiple seats available but the CX rep said that she couldn't see availability.

ExpertFlyer is as accurate as it gets, as it pulls information straight from the GDS. The problem you're almost certainly facing is related to point-of-sale issues. As explained (once or twice) up-thread, EF does not allow Vietnam POS to be entered which complicates things.

Changed my ticket (dates and times only) for the second time, as times did not work again. For the second time, CX refunded me $0.04 for both tickets. I love this fare and this tickets!!! Just go to CX.com, input days where C inventory (view first in Expertflyer) is available, pick flights, change flights to new ones, confirm and done. Ohh again, good thing I picked C inventory for $25 USD extra on each segment. Now my ticket can be changed an unlimited amount of times for free.

They said dates and time. I didn’t see them say destination. Did I miss something ?

I called the US call center was able to change my D itinerary with no problem. I was previously scheduled DAD-HKG-JFK, JFK-HKG-DAD. For this D itinerary I was able to confirm a stopover on the outbound leg, so that is now JFK-YVR (stopover)-HKG-DAD.
Can someone add these flights to the wiki?
