Visa Information: check out the Vietnam visa/VOA thread in the Asia forum. You can get either a visa on arrival where you get the stamp on arrival) or a "looseleaf" visa in advance from a VN Consulate in the US (which allows you to go straight to the immigration queue). There are sometimes lines for the VOA stamp and so the loosleaf approach can save you some time.
Seat Assignments
per NWPlatinum below - Cathay blocks out all seats except for 2D for some reason. I never understood the reasoning behind this but in any event just contact them for a seat assignment and they’ll let you have your choice. They like to block out seats for people with bassinets and babies. But you can usually get 2A, which is the best see if you’re solo traveler. Just say I want seat 2A and I’ll move if requested at the airport (never was asked to move)

Everyone needs an e-visa approval before boarding if they will enter the country. (e.g. clear customs). Connecting flights - even on separate tickets - do not require a visa IF IF IF the connecting airline has a counter in the transit area. (The airline may have their own rules.) Going back to the same country is not allowed without clearing customs first.
Expect the visa check at your point of departure. (Computer will flag your ticket.) The actual stamp is received on arrival (in most cases). (There is also the possibility of a visa insert with no need to go to 'visa on arrival'.)

The only available option that I can see is to change to a later onward connection on the same day that I am currently booked on, and only for the inbound.

Some people have been giving examples that nothing happen when they give up the last segment on other tickets or Mileage run. Those are regular/sales fare. And not mistake fare.
In this case, this is a mistake fare n we won’t know what CX will do when people drop the last segment. They might do something to recover their cost since they have honor the contract and would expect the pax to do the same.

Just curious what do you think CX is going “to do” to people who throw away the last segment? I don’t see how they could or would do anything. Yeah you broke the terms of the contract but if you have a good reason l don’t know what they could do. Bring you to court because you didn’t board the last segment since you were sick and had to go home and couldn’t travel to Vietnam sick?
I just think CX doing anything to people is really a long shot. Unless this is specifically brought up by CX, I don’t see what they could do. If they charge your card for $15,000, dispute it and show the original receipt of the ticket. I just don’t know what CX can do to someone.
Unless one pretended to have been feeling totally rough throughout the long-haul flight, which means one would have realistically have to forego the champagne and caviar, seeing as one was feeling too ill to enjoy any of those nice treats...

Sorry if I dare to say this, but this is completely not true. As all the other airlines, every mistake has its own story, BA recently honoured a First class fare JNB-BCN (at very similar price like CX) and also a biz class fare EDI-PEN (at similar price but in C this time).
Why should we always be apocalyptic in talking about the airlines? it would be easier just sticking to reality....

You keep banging on about doctor's notes and playing "sick", but honestly, how likely is it for someone to feel perfectly fine on the long-haul flight in F, and then suddenly feel so ill when it comes to connecting to their flight to VN that they claim they could not take that second flight anymore? I mean, of course it is a bit of a come-down to go from F to J, but surely it ain't so bad that it makes you physically ill? Unless one pretended to have been feeling totally rough throughout the long-haul flight, which means one would have realistically have to forego the champagne and caviar, seeing as one was feeling too ill to enjoy any of those nice treats...

HKG - SGN - HAN - HKG same day turn
I'm thinking of changing one of my flights to result in the following:
HKG-SGN arrive SGN 10:05 am (on CX)
HAN-HKG depart 7:50 pm (on KA)
I'd enter on a visa and book a domestic one way to make the connection. Anyone have experience doing something like this? Seems to be dozens of flights per day between SGN and Hanoi on VietJet, VN, JetStar... Obviously running the risk of missed connection, wondering if b makes sense to just book two SGN-HAN flights (on different airlines) as extra insurance since they're only $45 each.

I bought the ticket directly from Cathay Pacific website into C full-fare, flexible. For the first few days, they attempted to charge me $16,200 for flight change. I just manage to change the flights to difference dates, and they refund me Cents 0.5.
