Visa Information: check out the Vietnam visa/VOA thread in the Asia forum. You can get either a visa on arrival where you get the stamp on arrival) or a "looseleaf" visa in advance from a VN Consulate in the US (which allows you to go straight to the immigration queue). There are sometimes lines for the VOA stamp and so the loosleaf approach can save you some time.
Seat Assignments
per NWPlatinum below - Cathay blocks out all seats except for 2D for some reason. I never understood the reasoning behind this but in any event just contact them for a seat assignment and they’ll let you have your choice. They like to block out seats for people with bassinets and babies. But you can usually get 2A, which is the best see if you’re solo traveler. Just say I want seat 2A and I’ll move if requested at the airport (never was asked to move)

Everyone needs an e-visa approval before boarding if they will enter the country. (e.g. clear customs). Connecting flights - even on separate tickets - do not require a visa IF IF IF the connecting airline has a counter in the transit area. (The airline may have their own rules.) Going back to the same country is not allowed without clearing customs first.
Expect the visa check at your point of departure. (Computer will flag your ticket.) The actual stamp is received on arrival (in most cases). (There is also the possibility of a visa insert with no need to go to 'visa on arrival'.)

I've been communicating with CX via Whatsapp. The earliest date for F from JFK to HKG provided was 25th March.
The cancelled DAD route appears to be the problematic bit. They've said I can only re-route within Vietnam & SGN is only available destination currently.
However if I can't enter on the new ticket date due to restrictions, they will not amend the ticket again (as they've already made me aware there may be ongoing travel restrictions).
Similarly response if I were to cancel the HKG to DAD ticket and only fly JFK to HKG (they'd refuse to re-amend the ticket again if current travel restriction stay in place).

In my experience, when you go to them with a specific (reasonable) plan with specific dates they are very accomodating.

Ahh you are right. The 9am shows F class on CX; looks to be alternating between 2 and 3 times a week. (I was thinking of only the late-night flight.) I have to reposition to JFK so the 9am is not really viable.

Thanks everyone, for sharing your experiences. Our tickets are over a year old (we flew the outbound from Vietnam in early November 2019), and had been pushed to early January right before CX announced dropping HAN. I called HK office today and was firmly told refund is the only option. I politely declined, and called back later. This time they told me they would move it to earliest possible, March 3, to SGN. Only problem was no A inventory, only F. She told me she would call me back. An hour later I received a callback, and they opened up A inventory and we are booked to go in March.
We'll see what happens. If Vietnam is open we're going.

Thanks everyone, for sharing your experiences. Our tickets are over a year old (we flew the outbound from Vietnam in early November 2019), and had been pushed to early January right before CX announced dropping HAN. I called HK office today and was firmly told refund is the only option. I politely declined, and called back later. This time they told me they would move it to earliest possible, March 3, to SGN. Only problem was no A inventory, only F. She told me she would call me back. An hour later I received a callback, and they opened up A inventory and we are booked to go in March.
We'll see what happens. If Vietnam is open we're going.

Today's data point for Dec 31 flight to HAN (KA portion from HKG to HAN cancelled) ... Twitter first said refund only as Dragon is no longer. Asked about flights available to SGN instead and was told Jan 4/5 is first available (J). I asked about my concern that Vietnam won't let tourists in. Twitter said not their problem and then refund is the only other remaining choice. I delayed decision. Will call HKG office tomorrow.

What is your goal? Fly to DAD? Fly anywhere?
In my experience, when you go to them with a specific (reasonable) plan with specific dates they are very accomodating.
(Yes to JFK-HKG opening FC in late March on the 2am-ish flight. I have a flight then; one of the first few days.)

I have mentioned it before, but worth saying again, if you get the USA office, don't bother pushing if you get a no; they don't seem to be able to (or willing to) make significant changes. Europe and Hong Kong have been most helpful.

darn.... been putting off making changes till last minute and looks like CX is being inflexible right now on this tickets..
Couldn't find any agent willing to rebook outside of Vietnam so only option is SGN
Found an agent that was willing to change to June '21 but couldnt make the change since no "A" fare availability at all till Nov '21.
Called back a bunch of times and asking for first available but since no A availability and saying Vietnam has travel restrictions, only option is to refund partial credits..
hmm... maybe the end of the line for me... flight on Jan 2nd and will try a couple of times till then but not looking good so far.

I would wait until the last minute to accept a refund. If it were me, I would check A fare availability every day; maybe it is a glitch. Even if it is not back I would call again. Pulling ALL A from the USA and then saying sorry can't help you doesn't seem right.

Argued with CX alot & finally rebooked for end of March in Business as they have zeroed out all A fares (I should be able to upgrade if they do reinstate A but no compensation).
I think they're going to be very inflexible from now on and refund for will be the only option for those rebooked into next year (that go beyond the one year ticket validity).
They have explicitly said I will not be able to rebook further should I be unable to fly in March & refund will be the only option.
Fingers crossed for flying in 2021 & Merry Christmas All (for those that celebrate it).

Why are we looking for A class here? In case of a cancellation CX should rebook in the same class of service, not the same fare bucket - no?

No. Every time I have changed a ticket, the agent has always stated, even before looking, that they will look on the date I wanted and see if there is an A fare available.
