Visa Information: check out the Vietnam visa/VOA thread in the Asia forum. You can get either a visa on arrival where you get the stamp on arrival) or a "looseleaf" visa in advance from a VN Consulate in the US (which allows you to go straight to the immigration queue). There are sometimes lines for the VOA stamp and so the loosleaf approach can save you some time.
Seat Assignments
per NWPlatinum below - Cathay blocks out all seats except for 2D for some reason. I never understood the reasoning behind this but in any event just contact them for a seat assignment and they’ll let you have your choice. They like to block out seats for people with bassinets and babies. But you can usually get 2A, which is the best see if you’re solo traveler. Just say I want seat 2A and I’ll move if requested at the airport (never was asked to move)

Everyone needs an e-visa approval before boarding if they will enter the country. (e.g. clear customs). Connecting flights - even on separate tickets - do not require a visa IF IF IF the connecting airline has a counter in the transit area. (The airline may have their own rules.) Going back to the same country is not allowed without clearing customs first.
Expect the visa check at your point of departure. (Computer will flag your ticket.) The actual stamp is received on arrival (in most cases). (There is also the possibility of a visa insert with no need to go to 'visa on arrival'.)

I suspect it's just a terminology thing. Dug in a bit with another agent right now. He confirmed that my previous eticket was not refunded and the two remaining segments were still open, which is essentially what you'd expect if you want to honor historical rates in the future with a reissue.
Even on United, if your first segment hasn't been flown, you can call the unflown eticket a "voucher" so long as no-shows aren't penalized, since any changes to an unflown ticket reprice at current rates. Given that the "cathay credit" is associated with a PNR and my eticket hasn't been changed at all, I suspect this is what cathay refers to as a "cathay credit." Obviously, the description doesn't make as much sense if you've flown a few segments, and in that world, the unflown eticket operates less like a voucher, since changes price at historical rates. (But for this fare, obviously, date changes price at historical rates as well regardless of whether the first segment is flown.) On other carriers like United, when the ticket is refunded to an actual voucher, you get a separate code for the voucher and it is not associated with your previous PNR/eticket.

anyone had any luck changing to destinations outside of Vietnam? Just wanted to have some data points before i try calling. I am going to try for DPS as i think it has the greatest chance of opening up first out of all the southeast asia cities.

Following several other extensions, I had my first class return to SGN scheduled to depart JFK in a week or so.
Received an e-mail that the flight had been cancelled.
Called CX and they said I either had to take the next available flight or pay a change fee to move it to a later date. They said the next available flight was two-days later.
I argued there was no F on that flight in December, that I was unwilling to downgrade to C, and that they should then move me to the next available flight with F. They did.
I am now scheduled in early February.

One data point I've noticed in dealing with CX on this fare - try calling the HK number during HK business hours so you're more likely to end up with the HK call center. They seem more empowered to deal with this ticket, even when multiple US call center employees + Twitter failed.

Pretty far. Moved a November to late spring after CX canceled FC out of JFK for the rest of the year. Moved a January flight even further.
(Note: Your flight must be canceled or downgraded before they will do anything without a fee.)
Someone else reported having an open ticket that could be used through June or July.
100%. In my experience calling the US number is worthless; You are almost certain to get a no or you have to pay a fee.

I have a 2 segments left to fly, JFK-HKG and HKG-DAD, and am trying to come up with the best strategy to actually be able to fly them.
These were originally scheduled in November 2019 and were moved to November 2020 after the itinerary was partially flown (made the change while in the HKG airport and paid ~100 USD per pax). The Nov 2020 flights were cancelled/downgraded by CX and CX let me push the itinerary to the first available date, which at the time was Jan 2021. Those flights have now been cancelled, as the HKG-DAD route was KA operated and there have been a couple date changes/downgrades on my JFK-HKG segment.
Since the ticket is past the 1 year validity, I understand that CX will likely only move me to the first available flight, which is early Feb for JFK-HKG in F and doesn't exist for HKG-DAD since the route hasn't been reinstated by CX.
I was considering changing my destination to somewhere else in VN, but it looks like only SGN is on the schedule. My concern is that since the SGN flight seems to be operating regularly, cancellations by CX aren't as likely. Therefore, any changes would be considered voluntary (as a result of VN being closed to foreigners) and afforded less flexibility, if any.
I'd be interested to hear any thoughts or strategies on what others have done in similar situations.

I'm in the same situation. Jan 2021 is coming up and there is zero chance I'm going to be allowed to able to fly this and my DAD flight is canceled.
I tried to request to turn the ticket into Cathay Credit as mentioned in a few posts above but they said they could not do that because the ticket is partially used. Cathay Credit is only available to wholly unused tickets.
However, they said they would be able to do it if they can take a look at the booking reference which had successfully turned into Cathay Credits. If anyone whose able to get theirs turned into Cathay Credits, please DM me. Thanks so much.

I've been communicating with CX via Whatsapp. The earliest date for F from JFK to HKG provided was 25th March.
The cancelled DAD route appears to be the problematic bit. They've said I can only re-route within Vietnam & SGN is only available destination currently.
However if I can't enter on the new ticket date due to restrictions, they will not amend the ticket again (as they've already made me aware there may be ongoing travel restrictions).
Similarly response if I were to cancel the HKG to DAD ticket and only fly JFK to HKG (they'd refuse to re-amend the ticket again if current travel restriction stay in place).
