Visa Information: check out the Vietnam visa/VOA thread in the Asia forum. You can get either a visa on arrival where you get the stamp on arrival) or a "looseleaf" visa in advance from a VN Consulate in the US (which allows you to go straight to the immigration queue). There are sometimes lines for the VOA stamp and so the loosleaf approach can save you some time.
Seat Assignments
per NWPlatinum below - Cathay blocks out all seats except for 2D for some reason. I never understood the reasoning behind this but in any event just contact them for a seat assignment and they’ll let you have your choice. They like to block out seats for people with bassinets and babies. But you can usually get 2A, which is the best see if you’re solo traveler. Just say I want seat 2A and I’ll move if requested at the airport (never was asked to move)

Everyone needs an e-visa approval before boarding if they will enter the country. (e.g. clear customs). Connecting flights - even on separate tickets - do not require a visa IF IF IF the connecting airline has a counter in the transit area. (The airline may have their own rules.) Going back to the same country is not allowed without clearing customs first.
Expect the visa check at your point of departure. (Computer will flag your ticket.) The actual stamp is received on arrival (in most cases). (There is also the possibility of a visa insert with no need to go to 'visa on arrival'.)

You should be looking for a no-show fee-- it's not a cancellation, simply an informing of the check in agent that I need to perform check in again at HKG for a practical reason. If it were CX metal back to Vietnam, I would not advocate this, but the probability that CX queries VN on whether or not you boarded a VN-operated segment is low. If you check in and no show, but VN tracks you to a CX lounge, there's some chance they'll come find you. If you don't check in and no show, VN will just assume you didn't make it to the airport.

I did. Initial departure late Feb 2019, called in March to push my original March 2019 return to early Feb 2020. They were able to do this and booking shows confirmed on Cathay's site.

Btw if you read LH/LX forums, there is also advice to give a legit reason and not check-in, rather than check-in and skip the last segment outright.

A bit of a situation here. I have an itinerary of HAN-HKG-YVR-HKG-HAN with the TPAC legs in F, with a direct turnaround at YVR. My flight out of HAN is scheduled is delayed, resulting in a misconnect at HKG. CX's auto generated email put me on the next available flight to YVR which is 16 hours later than the original departure time, and in J, not F. It left intact the YVR-HKG-HAN legs.
1) would I be able to convince CX to reinstate me in F? Of course I would prefer F to J, and I wouldn't have positioned myself to HAN if I had known I was going to get downgraded.
2) would I be able to reschedule the retuning legs of the trip given that I will miss them as a result of the misconnect?
It would be nice if I can move the dates for all of HKG-YVR-HKG-HAN legs. Anyone had similar experiences?

A bit of a situation here. I have an itinerary of HAN-HKG-YVR-HKG-HAN with the TPAC legs in F, with a direct turnaround at YVR. My flight out of HAN is scheduled is delayed, resulting in a misconnect at HKG. CX's auto generated email put me on the next available flight to YVR which is 16 hours later than the original departure time, and in J, not F. It left intact the YVR-HKG-HAN legs.
1) would I be able to convince CX to reinstate me in F? Of course I would prefer F to J, and I wouldn't have positioned myself to HAN if I had known I was going to get downgraded.
2) would I be able to reschedule the retuning legs of the trip given that I will miss them as a result of the misconnect?
It would be nice if I can move the dates for all of HKG-YVR-HKG-HAN legs. Anyone had similar experiences?

2) Yes but YMMV as to the number of days out you can postpone it, subject to the agent's judgment of what is reasonable. My dad postponed return legs by 2 days successfully in an F misconnect situation like yours.

I think my first actions would be to get them to reinstate the original hkg-yvr flight in first and let them know or believe that you are already in hkg. then buy a ticket from han-hkg which would be cheap and stay on schedule. The other thing that I discovered when I was in HKG on my first leg of this deal when in the lounge was when I approached them about making some changes to my future itinerary, they said there was no availability thinking I wouldn't be willing to downgrade a two hour flight and they didn't communicate that option to me but now I believe it exists. so I am going to ask again while being clear about the downgrade. so, you might see if they can reschedule the han-hkg leg in economy and keep you on track.
Do you have the us cathay phone number? someone earlier had success with them for making some changes. Sorry, if I have misread the situation, but if your problem is han-hkg, that would be easily fixed for a couple hundred dollars or 8k united miles.

1) Yes, subject to availability and your flexibility to route through SFO/ LAX if there isn't.
2) Yes but YMMV as to the number of days out you can postpone it, subject to the agent's judgment of what is reasonable. My dad postponed return legs by 2 days successfully in an F misconnect situation like yours.

Evening. It's likely that you'd have to either fly J to YVR on the next day's afternoon flight arriving at 11:00am at YVR to make it to your cruise in time, subject to J availability, since the afternoon HKG-YVR flight doesn't have F. Only the midnight flight does. Of course, YMMV.

Lesson learnt - the hard way
Just completed the HAN - YVR round trip and had a long overnight layover in HK. Had previously considered ditching the final leg but I have further flights to JFK in a few months and didn’t want to jeopardise those flights.
How bad bad could it be anyway? The Pier has got some pretty quiet and comfortable spots to relax I figured. I figured wrong. Some of you probably know how this ended but for those of you who don’t you’ll find out like I did that all CP lounges close at 12.30am and don’t reopen until 5.30am. Ouch.
It was too late to book a transit hotel by the time I found out so I slept out on one of the bench seats near a boarding gate. I felt like a hobo.

FYI (in case someone is interested): Grab from the airport to Hanoi City Centre (Hilton) was 280,000 + 20,000 VND Airport Exit Fee all charged via app. There is very fast, free wifi in the terminal with no sign up requirement.

The Plaza Premium Lounge should be open 24/7 and is accessible with PP as well as Amex Platinum.

Though I’ve hidden city ticketed and dropped flights off multi leg tickets a number of times I am aware that can take a number of actions that could, if they chose to enforce them, affect both my FF account and any future flights with the airline.
Anytime I’ve done it in the past (last time was in February) I’ve been sure to have a FF balance close to zero and no further flights booked with the particular airline.
