Visa Information: check out the Vietnam visa/VOA thread in the Asia forum. You can get either a visa on arrival where you get the stamp on arrival) or a "looseleaf" visa in advance from a VN Consulate in the US (which allows you to go straight to the immigration queue). There are sometimes lines for the VOA stamp and so the loosleaf approach can save you some time.
Seat Assignments
per NWPlatinum below - Cathay blocks out all seats except for 2D for some reason. I never understood the reasoning behind this but in any event just contact them for a seat assignment and they’ll let you have your choice. They like to block out seats for people with bassinets and babies. But you can usually get 2A, which is the best see if you’re solo traveler. Just say I want seat 2A and I’ll move if requested at the airport (never was asked to move)

Everyone needs an e-visa approval before boarding if they will enter the country. (e.g. clear customs). Connecting flights - even on separate tickets - do not require a visa IF IF IF the connecting airline has a counter in the transit area. (The airline may have their own rules.) Going back to the same country is not allowed without clearing customs first.
Expect the visa check at your point of departure. (Computer will flag your ticket.) The actual stamp is received on arrival (in most cases). (There is also the possibility of a visa insert with no need to go to 'visa on arrival'.)

It seems to me you need a multiple entry, because you are flying to Danang to take your CX flight, then given it is a round-trip you would be returning to Danang. There isn't really a just transit in Danang. I don't know if you meant you would fly to Hong Kong and then from there to Danang, because you would still need a visa for the supposed entry to Vietnam because that's what your ticket shows, and they wouldn't let you board otherwise.
(I don't know about situation for countries which have visa-free, whether you can stack it or there is a waiting period. If you didn't have visa-free I would do 2 evisas versus one multiple entry

Just finished my outbound flight back HAN-HKG-SFO, and started poking around EF to see if there were any options for changing my return given that some people here appear to have had some luck. I noticed that starting in August, both CX 873 (the flight with F) and CX 851 are scheduled to leave at the exact same time at 12:50am. I know there was some speculation up-thread about CX potentially downgrading the SFO route to remove F. Not sure what's going on but it seems weird to have both flights departing at the same time.

No visa is needed for the first entry if you are a UK citizen. For the second transit, it may or may not be possible to transit airside so it is worth having a backup plan (i.e. single entry VOA letter) in case of problems/misconnecting between flights.

Booking a separate ticket on JL as NRT-HAN then onwards HAN-HKG on CX(KA) the next morning, if I can manage to get BP and luggage checked through at NRT there should be no problem in terms of transit right? Will CX agent need to be present at transit desk when I arrive (10pm)?

No problem. I think DAD is also in the process of clarifying things, given how many new passengers will be coming their way thanks to CX (I bet before this most people didn't know what Danang was).

This may be answered upthread, I've tried to keep up but may have missed it.
My scenario:
US Citizen. Flying in to HAN two days prior to HAN-HKG-YVR. I only have a 3 hour layover before hoping back on the plane (same plane) back YVR-HKG-HAN. Since this is TWO entries, I assume I will need the multiple entry visa.
Others have suggested apply for two, one time entry visas. But I have heard you need to apply for the second one AFTER you have used the first. In my situation, I may not have time to apply for the second one (depending on how long it takes).
I will be spending two nights in Vietnam (during first entrance), so maybe I can apply for the second during that time?
Just trying to figure out if others have been in my same situation (true mileage run). Thanks for any insight!

please keep us advised, I have the exact same itinerary, and want to make certain I have the visas I need. I was hoping I could do the e visas for each time I am entering Vietnam.
I used the old process of getting a letter and presenting it in Saigon with my picture, cash, and forms and that took at least an hour. I want to avoid that.
I would be happy to get a multi entry, but it just doesn't seem as easy as two single entries. doing the same thing again in October for the other side of the ticket but won't be within the time limit of the multi entry limit of six months

HAN - You can transit airside. (I have done it several times now.) But, must be to another country; no hop off, hop back on same flight without clearing customs.

DAD - You must clear customs. No way to stay in transit. Read a few posts above. Seems like some people have chanced it and it worked, but why take the risk?
HAN - You can transit airside. (I have done it several times now.) But, must be to another country; no hop off, hop back on same flight without clearing customs.
