Not looking to book this now as we are headed to Italy over Thanksgiving but how do you find these kids of Flights? I'm looking to go somewhere early summer next year possibly Scotland / Ireland and would love to get good deal in business. Dates are open so what is the best way to search?

Airline loyalty programs are not like hotels, you can book them anywhere and get the same benefits. The last exception to this that I'm aware of was CO years ago when they only credited 50% if you didn't book cheaper fares through Continental.com.
