PHL-PEK round trip for $400 (PHL-SFO-PEK-ORD-PHL, 15692 PQM on United) from Sept to Dec. You will have to stay two nights in Beijing, though.
Here is a sample itinerary (with good connection time).

Regarding skipping the last leg, I've read that you may have trouble with collecting/rechecking bags if you arrive in IAD at the midfield location, but I assume you won't be checking bags for such a short trip. As far as the miles posting, yes, they should...however, I can not (legally?) recommend you skip the last leg, although I and others have done it in the past. I believe, but I can't be sure, that as long as you don't make a habit of it, UA will not have any problem with it.

DEN-PEK is $350. PHL-PEK deals (<$400) have been around for a long time.
