Looks like your options are MR or 3+ nights.

Good fare, but awful layover times! Have you seen any dates with reasonable layovers?

Nope! Probably why it's priced so low.
You can change the 6 am SFO-IAH flight to 9 am if you want to make a mini trip out of SF tho.
