You may need a good travel agent to book successfully, but here is a sample one-way itinerary in September for $2,046.90:

(itinerary redacted)

Are you seeing any availability of this in December? Unless I missed it in the fare rules it's still a valid fare for then, but I can only find J on the Asian carriers, and I'd love to fly EK F and use those stopovers in DXB and LHR (since I'd eat the ADP and YQ anyway).

It works in December, but I think you'd have trouble scheduling actual stopovers >24 hours in DXB or LHR because the HIP check would force a higher fare. (I do have an itinerary with a >24 hour stopover in CDG though.)

I've had no problems booking these tickets recently on EK's website.

Could you please tell us if there are other hubs that do not trigger the HIP check? Mostly interested in CPH/ARN/OSL.

Not anymore. UA and EK don't have a partnership anymore.

Hike in price? I'd like to know myself.

And, forcing the airlines/connections I'm able to see all sorts of availability; now booking ... that's a different story. I'm not seeing any luck on Emirates.com

Here is how I sort of understand it: Higher intermediate point/price check -- hits when a ticket from origin to stopover is priced higher than a ticket from origin to final destination on a fare that includes a HIP check. It is an instruction to check the price with that in mind and to price the ticket higher if the stopover point is such as to result in a fare higher than origin-final destination fare.

When a connection city has a higher fare than that which you are using between the origin and destination cities, that invokes Higher Intermediate Point provisions of fare rules. Also, see this thread for a discussion.
