The day Cocoa Bean Fine Desserts (11 S. 7th St., Geneva; 630-845-2990) opened, its air conditioning went out. The second day, the freezer went kaput. “Now we’re back on track and the customers never knew we were having problems,” says co-owner Paul Saucedo. Saucedo, his wife, Nancy Wasik Saucedo, and partner Joshua Johnson, have 40 years of pastry experience among them—at such places as Rhapsody, Ambrosia, and Everest. Their new venture offers every kind of goody you can imagine, such as a signature peanut butter chocolate mousse cake ($32; serves ten). “And,” says Saucedo, “at the end of the day, whatever is left is handed out to banks, City Hall, the police department, and the fire department.” Lucky stiffs.
