Excursion from Haifa: What are your thoughts?
 
My ship is running an excursion that does this:

Mt. Carmel
Zippori National Park
Sea of Galilee and Tiberias
Yardenit
Golan Heights
Capernaum

Any thoughts about this would be appreciated..

I assume that this is a one day tour. You will probably "drive by" a lot of places because the itinerary covers a lot of ground. My guess is that you will visit Zippori and Capernaum, eat lunch by the lake in Tiberias. Yardenit is the baptism site on the Jordan River. In the Golan you might stop at one site such as Mt Bental to look into Syria or the Banias.
In summary, you have only one day to see an area that requires at least a week so this tour is as good as any. You can't do as much in the Galilee on your own.

Is the ship offering other tours? How many days do you have in total? Will you be visiting Jerusalem? What days of the week?

You could easily spend a full day (or more) in at least three of those places, and it doesn't include Safed, for which the same is true, or Nazareth. That said, if you don't have the time, then you don't have the time, and if this is the tour, then this is the tour. As a once-over-lightly, it could be a lot worse. It might make you want to come back to really see some of them!

This tour is on a Friday.

There are other tours, but I would really like to see the Golan, so this would be it for me.

I've been to Jerusalem, so will pass this time.
