Did you try doing a search?
"Dubai safari" yields a couple of threads (from a couple of years ago admittedly). But a good starting point ...

Hi

Thank you for your advise , I have checked several sites , and it seems that most companies do the same thing , there are just different prices for the same trip

Kind regards

ELO

Can't help with desert safari. But if you want additional things to do in Dubai, post #58 of this trip report may be helpful.

Lots of great pictures in your post. Your advice is to purchase a metro pass and visit "the marina, Dubai Mall, the needle, Burj Khalifa, gold souk, spice souk, fish market and Dubai Creek."

I'm also trying to find something authentic to do for a few days in Dubai. I'm sure the Burj is a great engineering marvel and the markets are fun to look at, but I want to get a flavor for what life is like for the average resident, and possibly explore something outside of the concrete jungle. Thanks to all who have contributed to this thread.

At the suggestion of another FTer, I attended the Sheikh Mohammed Centre for Cultural Understanding. They offer a tour and a traditional meal for breakfast, lunch, or dinner. They give a talk about Dubai traditions and answer any and all questions about Arab culture and Islam. This meal, tour and presentation was the highlight of my trip to Dubai. You will leave with a cultural understanding that the average tourist never gets. They have a website that should answer any questions you have about the program.
Edited to add: You can pick up an Entertainer book in Dubai which offers hundreds of discounts. It is rather expensive but using one coupon could pay for the book. There are many BOGOs. If there are two of you traveling it will definitely pay for itself. The SMCC, desert safaris and hundreds of restaurants are (or were) in the book.
