Signing up to buy $1000 visa/mc gift cards
You can buy the $1000 cards on Simon's volume site. Their regular site only sells $500 cards.
If you're new, or haven't bought anything in a year, you need to register at https://www.simon.com/volume/register-consumer
As part of the registration process, you will have to go to a brick and mortar mall and buy at least $3000 in cards in person, as well as filling out some paperwork while there. After that, you can do everything online.
As of Nov 2020, Simon Mall Gift cards will only work for $99/swipe for money services at Walmart and many grocery chains.
$1000 gift cards are available indefinitely.

I used my Alliant Credit Union 2.5% card and bought 10k simon VGC, it didn't get any cash back when the month closed for the card. wasted fee and effort etc.

I bought 9500 at gcm and same. I'm surprised they killed it completely since they capped it at 10K for all purchases.

Walked into my local Simon which opened this week and they were not selling any GCs. In fact, office was closed with sign hanging on door saying no GC sales.
Another mall official said that for now, no GC sales.
However, going to make another run today and see if that is still the case.

Look up the Frequent Miler posts from about a month ago, he covered in detail how to sign up for an account. They're now doing a promo on fees and shipping, where it comes out to almost the same cost per card as buying at the mall.

I was checking balance on some old cards from October 2019 (some still had small amounts on them) and all of them showed "blocked call CSR" message. Called Simon and was told that large batch of cards was stolen and they automatically closed that batch and need to issue replacements. How you like that?

Just an FYI, the free shipping only applies to orders of 7 cards or more. There's also a $10 processing fee per order. Still a good deal if your mall office is closed (seems like almost all of them are), or your mall is far away.

You must have missed the memo, they now have a code for free shipping AND 20% off fees for 10+ cards. That makes is about same as store prices on orders of 10-14 cards, and cheaper if you go to full 20-25k.
