The extremely pleasant and efficient arrival made me feel welcome and extraordinarily well taken care of, and the pleasant drive with a very helpful driver who explained many things about Bali along the way, was an extraordinary way to arrive. It was an appropriate introduction to Aman Resorts.

Initially, ainternational and I decided to meet up at Amanpuri. We happened to run into each other at Amanpulo almost exactly a year ago, and had been in touch ever since. Ainternational had been to Amanpuri and Trisara before, but I hadn’t. I had only been to Trisara. Since Amanpuri was ‘where it all started’ for Amanresorts, I decided that as someone who really appreciates Amans, I must certainly visit Amanpuri. Ainternational even sent me the most recent Amanresorts coffee table book as inspiration called, Aman2.

Then, as luck would have it, FlyerEC, The_Daddy, and IndianEnglish all made arrangements to meet us at Amanpuri. In addition, ViennaResident made himself available at a nearby resort, Six Senses Ya Noi, for a visit as well. Ainternational (SFO-based) and I (YYZ based), took separate flights and met up a LHR. I had fun entering the UK with my UK passport (I am a dual Canadian – UK national), which was a breeze. '

One of the things that prevents Aman Resorts from being stuffy and pretentious is the staff Mostly young, all are committed, enthusiastic and incredibly hospitable. This young Chef is no different and is as happy introducing himself and his philosophies of food as he is cooking.

As General Manager Tracy Atherton puts it, "Our chefs have to be able to talk to the guests; it is part of our service and Guy [Stanaway] fits in well."

The setting for dinner is one of the highlights of Amankila. By day their Beach Club is a destination in itself, by night it can be booked for only one couple at a time - or in our case a group. The table is laid beside the pool and Guy introduces his assistant for the evening (a tongue-in-cheek intro), Amandari’s Executive Chef Christian Hinckley.

What follows is culinary bliss; from a tiny jewel-like, pan-fried scallop to a tuna carpaccia to parmesan-crusted snapper with a lemon miso sauce, to a beautiful duck and foie gras terrine with toasted brioche fingers. Each course was matched to a beautiful wine, carefully deconstructed by the chef for the diners. The finale, a carrot cake unlike any other with a cream cheese frosting ice cream perched on top, was the undoing of many – so rich, so good.

...In just two months at the property Guy has had time to absorb the local flavors, connect with the tastes of his guests and put his own stamp on a menu that needs to satisfy a very discerning clientele...guests are encouraged to let their hair down, take off their shoes and enjoy.

If a special meal is on your list of things to do in Bali, make this stop in East Bali.

I heard that Franky Tjahyadikarta is intent on bettering Aman. In his dreams. Alila is a very poor substitute, from my experience. Not even GHM level.

I remember when Banyan Tree thought they could better Aman.....

Nobody has done it yet and I suspect nobody will because nobody really understands how Aman works. There are no manuals, no operating instructions, no real hierarchy. Aman is a very right brain business (intuitive, creative), whereas most, if not all others are totally left brain (logical).
