This supposedly resumes on 16 June, twice a week, then 3-4 times a week as of July, then daily as of August. What is the likelihood of this happening, given the situation with the foreigner ban into Brazil (which I assume will be extended) and the UK quarantine (which, for Brazil, I imagine will be around for a fair while)? Want to book this for my mother to come visit me in the UK (Brazilian, so she can get back no bother) but don't want to end up in a long battle trying to get my money back form LATAM if it gets cancelled.

BA keeps postponing the route over and over and over and over so I am not sure I trust them (but easier with a refund from them!). Any other routes that are maybe most reliable?

Not sure about LATAM, I suspect we will know very shortly whether they will stick with the plan. Indeed the foreigner ban is still in place, but quarantine measures are being slowly relaxed in various cities in Brazil. BA has indeed postponed resumption multiple times but it is flying cargo flights 4x week, so they may decide to open up for passenger flights in July (they also downgauged to a 787-8 on the July schedule).
In terms of other (and more reliable options), all connecting but Lufthansa, Air France and KLM have been flying multiple times a week between GRU and their European hubs. TAP has also resumed twice weekly as of June 1st. Good luck.

Do we know if there are any issues for connections in Amsterdam, Paris, or Frankfurt/Munich for Brazilian citizens going onwards to other destinations (given the Schengen ban on non-EU)?

speaking of LATAM, for a JFK-GYE route, on their website, when you try to book a trip, it automatically puts the trip as 2 weeks, I guess taking into the fact that, as of now, you HAVE to quarantine for 2 weeks. does this make sense?

Seeing that a 14 day quarantine is mandatory right now in Ecuador then yes that makes sense
