These photos are from a Spanish forum on LA. They are from the first 767-300 that got it (can't confirm tail number yet, but I'll report it as soon as I know it). Apparently coach seats were only reupholstered.

I flew a 767 departing Lima to LAX about 2 weeks ago. I renember when i got the ticket that this could be a great fly for the new cabins but NOOO they put me into the oldest one.
Well i ask the crew and they told me that the new cabins will be operating from around May.

it was mentioned here that the first commercial flight with the new cabin was on Madrid-Lima on March 1st.

I don't think so... as far as I read this cabin will be only in retrofit 767 & 777 as well as new A350 to be delivered. I still didn't flew in this new 767 cabin, but I think the actual 787 J cabin is more comfortable and roomy than this new seat...

I assume that the "culinary experience" applies for all flights and not just for the ones that have been retrofitted? I flew EZE-SCL in premium business the other day (and a few weeks ago) and it seems they have changed the standard cold roastbeef platter to a "gourmet" sandwich consisting of semi dry bread with 1 slice of turkey ham, 1 leave of rucula and 2 pickle slices...

Yes there is one plane in the rotation CC-CXC that flies JFK-GYE but I'd say it's maybe 5-6 times out of the 35 flights a month.
CC-CXF is also refurbed and back in service as of Aug 13th, but has not made an appearance in JFK yet.

Expertflyer has a better idea but the most i've seen is 3-4 weeks in advanced when the regular seating chart converts over to the new seating chart indicating that one of the refurb aircrafts is operating the route... and of course with LATAM being very thin with their fleet one little MX issue and could change it all up.
