What to do in Vegas for 2 days?

What to do in Vegas for 2 days?
Yes, this a serious question, considering the following factors:
First - I and my wife live in Nevada, in Reno. Will be stopping by in Vegas on our way from Zion NP back to Reno. Now, the last time when I was in Vegas 'for fun' was 20 years ago when we had our wedding at Mandalay Bay.
It will be three of us, including our family friend. Now, we don't gamble, don't drink, and in general try to avoid buffets, unless it is a good value - means good quality food and it should not cost more than $30 per person.
I wanted to take our family friend in Vegas to show her around - it will be the first time her visiting Vegas. Considering the above conditions, what would you recommend doing?

For an experience you cannot see anywhere else in the world, watch Cirque du Soleil's "O". It's a Cirque show built around a remarkable set of swimming pools.

I am open for both strip and outside the strip as well - as I said, my information/knowledge is dating 15-20 years ago, and don't know what has changed for better. We are more interested to see the interiors/amenities/architecture of new developments if they are worth the time.
What shows one would recommend and how much tickets are running for?
What are 'out of beaten track' options, if this thing can be applicable to Vegas?
Shopping is not a main interest but I remember that there were two outlet malls - one before Vegas on I-15 and on north to the Strip, next to Stratosphere and people usually recommended going to the one south to Vegas, for better options/bargains. It is still the case?
P.S. I and my wife spent >10 years in Singapore and our guest is from Singapore as well. So I want to do something in Vegas that a person coming/living from Singapore would really appreciate.
That would be before we reach Vegas coming from Zion NP.

P.S. I remember back 20 years ago there was an option to shoot from M2 fifty cal. Need to check if it is still available.

Since you'll be coming from the north, maybe Valley of Fire state park, though since you'll have just been at Zion, it might be underwhelming (I am guessing based on what I've heard, have not been to Zion myself but have done VoF before)

If you don't mind spending a bit, rent a cabana at the Bellagio pool (or another one) and just spend the day relaxing and eating and drinking mocktails and people watching.
Try to see a concert at the Sphere. Bellagio conservatory (free).

It is well past June, when the original poster (OP) visited, but combining the Neon Museum, or Mob Museum, or both, with Fremont Street is a good "tourist" experience. I lived in the neighborhood for 32 months until April 2021.
The Hoover Dam is not enroute from Utah, but I highly recommend the two-mile hike toward it (cannot actually walk all the way) along the railroad grade, with beautiful lake views, starting at the Lake Mead National Recreation Area visitor center -- before paying the entry fee.
