How many days in Jeju is enough?

At least 3-4 days. All depends on what you want to do - but Jeju is a very large, spread out island and it takes time to get around if you're sightseeing etc. And of course day trip to other islands nearby, some time at beaches and so on.

What do you like to do on your trip usually?
I suggest you to do some hiking around jeju walking road.
there's a well developed hiking course which is called jeju olle ('olle' is a traditional word used in jeju province)
In particular, I suggest you to visit the course No. 6~8.
They are most beautiful among all of the courses.
