For me, the only two places worthy of a visit wer Yonggungsa Temple, which is more easily accessible from Haeundae, and Jagalchi seafood market, closer to central Busan.
Since I like choosing hotels that are most convenient for my last day in a location, I would tend to book a place near Busan's main train station, which is useful for airport buses, too. Since Busan is so spread out, basing oneself near the station will inevitably engender exploration, since that area's primary point of interest is just Chinatown.
